Chipotle-honey Grilled Chicken

Jotting this one down before I forget it! Absolutely fabulous marinade and sauce.


3 tbs puréed chipotle en adobo
2 tbs honey
2 tbs Dijon mustard
2 tbs olive oil
1/2 lime, juiced
1/2 tsp salt
1/2 tsp pepper
4 cloves garlic, minced
2 tbs cilantro, chopped
3 boneless, skinless chicken breast

For salsa:
1 avocado, diced
1/2 red onion, diced
1 lime, juiced
3 tbs cilantro, chopped fine
1 tbs extra-virgin olive oil
1/2 tsp salt


1. Mix all marinade ingredients, save chicken, in a bowl. Reserve 1/4 cup of marinade and set aside.

2. Jab several holes in chicken with a sharp knife. Place chicken in a shallow dish or bag, pour marinade to cover. Marinade for at least 2 hours.

3. To make sauce, blitz reserved marinade in a blender with 1-2 tbs of water.

4. For salsa, mix all ingredients in a bowl, cover, and refrigerate.
Serve with grilled corn on the cob, grilled tomatoes, and avocado salsa.
