Salsa Verde del Diablo

I have a obsession with tomatillos, and I love making fresh salsa verde.  This one came out a little hot!


  • 10 to 12 tomatillos, quartered
  • 1 white onion, chopped
  • 3 habanero peppers, diced
  • scant 1/4 cup Mexican lager beer (e.g. Corona, Tecate)
  • Salt, to taste
  • 1 lime, juiced


  1. Heat 1 to 2 tblsp. of oil or bacon grease in a cast-iron skillet; add onions, salt judiciously, and saute until onions turn translucent and begin to brown at the edges a little
  2. Add in tomatillos and peppers.  Stir well, salt, and saute for two or three minutes
  3. Add beer (drink the remainder) and simmer mixture until reduced well
  4. Remove mixture from heat and blitz in a blender until desired consistency is reached
  5. Return mixture to pan and return to simmer.  Add lime juice and salt, to taste
